Memphis Q beef brisket tamales

  • 4 cups chopped beef brisket
  • 2 cups masa corn flour
  • 1 bag corn husk
  • 2 tbs chipolte pepper purre
  • 1 tsp BBQ spice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1/2 cup shortening
  • 1/2 cup butter
  • 1/2 cup water
  • 1 tsp baking powder

Season cooked beef brisket with BBQ spice, cumin, salt and pepper. Set aside for later use. In a mixer mix Masa flour, 1 tsp of salt and baking powder. Add shortening and butter and let mix. Slowly add water and chipolte pepper purre. Lay corn husk flat and spread masa mix in center. Place small strip of the seasoned brisket in the center and roll up and tie tamale. Cook in stream pot for 15 minutes and serve with sourcream and salsa.
