Emeril's Jerk Seasoning

2 1/2 pounds chicken thighs (about 8 thighs)  

2 cups plus 1 teaspoon distilled white vinegar

2 cups finely chopped green onions (about 2 bunches)

2 jalapeos, seeded and minced

2 tablespoons soy sauce

2 tablespoons Kitchen Bouquet browning and seasoning sauce

4 tablespoons fresh lime juice

5 teaspoons ground allspice

2 bay leaves

6 garlic cloves, minced

1 tablespoon salt

2 teaspoons sugar

1 1/2 teaspoons dried thyme, crumbled

1 teaspoon gound cinnamon

2 tablespoons vegetable oil
