Summer Beverages
Try a sip of these cool drinks to beat the summer heat!
FRESH PINEAPPLE COOLERS
- ½ fresh pineapple, peeled, cored and cut into chunks
- 2 cups pineapple juice
- ¼ teaspoon coconut extract
- 10 ice cubes
Directions: In a blender, combine pineapple chunks, pineapple juice and coconut extract. Puree until smooth. Then, with the blender running, drop ice cubes one at a time into the opening in the lid of the blender. Make sure each cube is crushed before adding the next. Blend to desired texture. Serve in tall glasses.
FRUITY SUMMER COOLER
- 6 ice cubes
- ½ cup cubed cantaloupe
- ½ cup pineapple chunks
- ½ cup cranberry juice
- 1/3 cup sliced banana
- ¼ cup pineapple juice
- 1 Tbsp honey
- ¾ tsp. lemon juice
- ¼ tsp. grated lemon peel
- ¼ tsp. grated lemon peel
Place all ingredients in a blender or food processor. Cover and blend until smooth.
MINTY GREEN TEA LEMONADE
- 4 cups brewed Green Tea
- 2½ cups water
- 1 can (12 oz.) frozen lemonade concentrate
- ½ cup loosely packed fresh mint leaves
In a 2-quart pitcher, combine all ingredients; chill at least 2 hours. Strain, if desired. Serve in ice-filled glasses. Garnish, if desired, with lemon wedges. Makes 8 servings.
ICED STRAWBERRY TEA (Nestea®)
- 2½ cups hot water
- 5 Tbsp. NESTEA® Iced Tea Mix with Sugar and Lemon
- ¼ cup strawberry preserves
- 1 cup ice cubes
- 2 slices lemon (optional)
Combine water, Nestea®, and preserves in 1-quart pitcher. Refrigerate for at least 2 hours. Strain before serving, if desired. Serve over ice; garnish with lemon slices.
