Mother's Day is May 11th. Whether you are a mother, like a mother to someone or have a special mother; it is the day to be remembering those special women who love us and care for us.
Maybe you want to make a special breakfast or have dinner ready so she won't have to do all the cooking. These are some easy and delicious recipes to make for the mother you are celebrating.
A reminder to children and spouses everywhere: Any day can be mother's day. Don't wait for just one day a year to say "Thank You."
Blueberry-Sausage Breakfast Cake
1/2 c. butter, softened
3/4 c. sugar
1/4 c. packed brown sugar
2 c. all-purpose flour
1 c. sour cream
1 lb. bulk pork sausage, cooked & drained
1 c. fresh or frozen blueberries
1/2 c. chopped pecans
2 eggs
1 tsp. baking powder
1/2 tsp. baking soda
Blueberry Sauce
1/2 c. sugar
1/2 c. water
2 Tbsp. cornstarch
2 c. fresh or frozen blueberries
In a mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and baking soda; add alternately with sour cream to creamed mixture, beating well after each addition. Fold in sausage and blueberries. Pour into a greased 13x9x2-in. baking pan. Sprinkle with pecans. Bake at 350 for 35-40 minutes or until cake tests done.
For sauce, combine sugar and cornstarch in a saucepan. Add water and blueberries. Cook and stir until thick and bubbly. Spoon over individual servings.
Breakfast Buns
2 c. all-purpose flour
2 eggs, lightly beaten
3/4 c. sugar, divided
1 tsp. vanilla extract
1 Tbsp. baking powder
1/2 c. milk
3 Tbsp. butter or margarine
1 c. raisins
1/2 tsp. ground cinnamon
In a mixing bowl, stir together flour, 1/2 c. sugar and baking powder; cut in butter. Combine eggs, vanilla and milk; add to dry ingredients and stir just until moistened. Add raisins. Drop by tablespoonfuls onto greased baking sheet. Combine the cinnamon and remaining sugar; sprinkle over buns. Bake at 325 for 20-25 minutes or until light golden brown. Serve warm.
Slow Cooker Chicken Stroganoff
4 skinless, boneless chicken breast halves - cubed
1/8 c. margarine
1 (.7-oz.) pkg. dry Italian-style salad dressing mix
1 (8-oz.) pkg. cream cheese
1 (10.75-oz.) can cond. cream of chicken soup
Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours. Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm.
