Cajun Crawfish Pasta
Ingredients
- 1 tbsp garlic butter
- 2 tbsp chopped green peppers
- 1 tbsp chopped onion
- 1 tsp cajun spice blend
- 2 oz white wine
- 4 oz crawfish tails
- 4 oz heavy cream
- 4 oz alfredo sauce
- 7 oz fettucini cooked
- 1 tsp cut green onion
Directions
- In sautee pan, add garlic butter, peppers and onions, add seasoning and wine sautee for two minutes.
- Add crawfish, sautee for 1 minute.
- Add heavy cream, sautee for 1 minute.
- Blend in alfredo sauce and bring to simmer, then fold in pasta.
- Pour in 22 oz pasta bowl and garnish with 1 oz fancy shredded parmesan cheese and green onions.
Ingredients for alfredo sauce
- 1 tbsp margarine
- 2 tbsp flour (all purpose)
- 1 pinch (less than a quarter tsp) nutmeg
- 2 cups heavy whipping cream
- 1 cup grated parmesan
- 1/2 tsp cajun spice blend
Directions for alfredo sauce
- In pan, melt margarine, using wire whip mix in flour and nutmeg (be careful not to scorch). blend until smooth like a paste.
- Add heavy cream and cajun spice blend, continue to stir for two minutes until it begins to simmer.
- Add parmesan and whip until smooth.
- If not used immediately, cover, label, date and refrigerate.
