Scafide's Grits Mark Scafide, Long Beach Fire Dept.
1 cup grits "Quaker brand if possible"
4 cups water
6 generous shakes of salt
6 generous shakes of pepper
1/2 stick of butter
1 1/2 to 2 inches of a block of velveeta
Pour water, salt and pepper in sauce pan. Bring to a high boil. After water has boiled for approximately 1 min add grits. Stir the grits constantly while adding to avoid lumping. Reduce heat to medium low. Stir grits every 30 seconds or so for 3 min. Reduce heat to low. Add butter and cheese. Stir until completely melted and mixed. Turn heat off and let sit and thicken for a few minutes. Every minute or so whip grits until creamy. Serve hot and enjoy. Add salt and pepper to taste. Remember this goes great with fried fish as a side dish.
