Thanksgiving Additions

Isn't it wonderful when a new addition is added to your family?  Why not a new addition to the family turkey dinner?  If you agree I have some great ideas for you.  I hope you enjoy making and tasting these wonderful side dishes and desserts.  You just may find a new family favorite that will be a welcomed addition every year.  Happy Thanksgiving!

Broccoli Salad

  • 1 head fresh broccoli, cut into bite size pieces
  • 1/2 cup raisins
  • 1/4 cup red onion, chopped
  • 2 tablespoons white sugar
  • 3 tablespoons white wine vinegar
  • 1 cup mayonnaise
  • 1 cup sunflower seeds
  • 10 slices bacon

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside. In a salad bowl, toss together broccoli, raisins and red onions. In a separate bowl, whisk together the white sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.  Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.

Baked Asparagus Casserole

  • Crushed buttery round crackers
  • 2 cans asparagus, drained
  • 1 can mushrooms, drained
  • 1 can peas, drained
  • 1 stick butter
  • 1 c. milk
  • 2 cans cream of mushroom soup
  • 1 c. grated cheese

Place crushed crackers on bottom of casserole. Layer the drained asparagus, peas, and mushrooms on top of crackers. In saucepan melt butter. Mix butter, milk and cream of mushroom soup. Pour over top. Top with cheese. Bake at 350 degrees about 20 minutes.

Praline Pumpkin Pie

  • 1/3 c. butter or margarine
  • 1/2 c. chopped pecans
  • 1/3 c. firmly packed brown sugar
  • 1 - 6 oz. graham cracker crust
  • 1 c. cold milk
  • 1 - 16oz. can pumpkin
  • 2 pkg. (4 serving size) vanilla instant pudding & pie filling
  • 1 1/4 tsp. pumpkin pie spice
  • 1 - 8oz. tub non-dairy whipped topping, thawed, divided

Melt butter in small saucepan on medium heat.  Add pecans and brown sugar; mix well.  Bring to a boil. Simmer 30 seconds, stirring constantly.  Spread evenly onto the bottom of the crust.  Cool. Pour milk into large bowl.  Add pumpkin, pudding mixes and spice.  Beat with wire whisk until well blended.  It will be thick.  Gently stir in 1 1/2 c. of the whipped topping.  Spread in crust over pecan layer. Refrigerate 4 hours or until set.  Serve with topping and chopped pecans.  Store leftover pie in refrigerator.

Deep Dish Cranberry Apple Pie

  • 4 large apples, peel, core and slice
  • 2 1/2 c. cranberries
  • 3/4 c. splenda
  • 1/4 c. flour
  • 1 t. apple pie spice
  • 9 inch pie crust

Stir all ingredients together and place in deep dish pie pan. Cover with crust.  Make 3 - 4 slits.  Bake 375 for 1 hour
