A few drops of olive oil if the dough is too stiff
Mix ingredients and knead dough until an elastic dough forms. Cover with a towel and let it rest for 30-45 minutes. Roll the dough with a floured rolling pin until it is approximately 1/8 inch thick. Sprinkle some flour over the pasta before cutting to ensure it won't stick together. Use a knife, pizza cutter, or similar device and cut the pasta into whatever shape or length you desire.
Salsa Bolognese (Bolognese Sauce)
1 onion, sliced
1 Roma tomato, chopped
1/2 celery stalk, finely chopped
1 baby carrot, finely chopped
4 Tbsp extra virgin olive oil
1/2 lb ground beef
2 leaves of basil, chopped
Salt to taste
In a saucepan, put the oil, celery, onion, and carrot together over medium heat. When the onion is soft, add the meat. Let cook slowly until meat is blended with the vegetables. Add the tomatoes and salt, let cook for 20 minutes. Right before you turn it off add the basil. If you need to, you can add a little water after it sits for a while.
Serve over fettuccine, with a sprinkle of parmesan cheese if you like. (Serves 2 people)
