Valentine's Day Dinner Recipes

If you're looking for a good Valentine's Day meal to make for your loved one, Captain's Quarters at Treasure Bay Casino, Biloxi has a few ideas. Chef David Romines and Chef Ben Thigpen shared their recipes to make your Valentine's Day special. Here is everything you'll need from appetizer to the main meal. Enjoy!

Baked Oysters

  • 2 dz whole oysters
  • 1 garlic cloves, minced
  • 1 Tbsp. fresh parsley, minced
  • 1/2 C. butter, melted
  • 2 tsp. Worcestershire sauce
  • 2 Tbsp. clam juice
  • 2 Tbsp. chili sauce
  • 1/2 C. mushrooms, finely chopped
  • 2 Tbsp. parmesan cheese, grated
  • 2 Tbsp. bread crumbs
  • salt and pepper

Shuck oysters; drain and reserve half of the shells. Combine parsley, garlic, Worcestershire sauce, clam juice and chili sauce with 6 Tbsp. melted butter. Dip each oyster into this sauce and place in a shell on a baking pan. Spoon remaining sauce over oysters. Sprinkle a tsp. of chopped mushrooms on each oyster. Stir cheese and bread crumbs together and sprinkle over oysters. Dribble with remaining butter. Bake at 400 degrees for 15 minutes.
Serves 6

Oysters Casino

  • 32 oyster, scrubbed
  • 1/4 C. butter
  • 1 tsp. anchovy paste,
  • fresh lemon juice
  • 1/4 C. green peppers, minced
  • 1/4 C. pimientos, chopped
  • 4 bacon slices, cut in tiny pieces
  • 1/2 C. watercress sprigs, chopped

Remove clams from shells, reserving shells, and discard the juice. Cream butter and anchovy paste. Put a lump of anchovy butter (about 1/8 teaspoon) into each shell. Place a clam in each shell and sprinkle with lemon juice. Mix pepper and pimiento and distribute among the clam shells. Top with bacon bits. Broil about 8-10 minutes, until tops brown. Sprinkle with watercress. Serves eight as an appetizer or four as a main course.

Crab Cakes

  • 1 egg
  • 2 Tbsp. mayonnaise
  • 1 tsp. dry mustard
  • 1/2 tsp. black pepper
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. Tabasco sauce
  • 1/4 tsp. paprika
  • 1 Lb. crab meat
  • 2 slices white bread

Blend all ingredients except the crab and bread. Stir the egg mixture into the crab meat and crumbs and form cakes. Heat a little oil in a skillet over medium heat add the cakes and cook about 2 1/2 minutes on each side or until browned. Remove and drain. Serves 2

Boiled Lobster

  • 2 each lobster- 1-2 Lbs.
  • 6 Tbsp. salt-kosher or sea
  • 1 each stock pot 2 gl.

Put 1 1/2 gallons of clean water and the salt in the stock pot and bring it to a boil. Drop the lobsters in the pot head first. When the water returns to a boil, start to time their cooking: 8 minutes for the first pound and 3 to 4 minutes for each additional pound. Serves 2
