Crawfish Prices Sliding

Louisiana crawfish producers say after two consecutive dismal seasons due to drought, consumers should enjoy a bigger supply at lower prices through the spring. Jay Huner of the Crawfish Center at the University of Louisiana at Lafayette says pond crawfish are getting back to normal and the current season will benefit from heavier rainfall.

Huner says the prices should remain low until at least August. And, he says wholesalers will benefit because of larger volumes and restaurants will be able to charge less for crawfish.

Dwight Breaux of Dwight's Restaurant in Lafayette says a five-pound platter of crawfish will sell for about 19 dollars. Last season, he says that same platter went for as much as 28 dollars.
