Breakfast-On-The-Go - - The News for South Mississippi

Breakfast is just what is says - Break the Fast. Your body has been resting and is waking up for a full day of activity.  It needs fuel.  Try these quick ideas for a Breakfast-On-The-Go that I received from Kraft Kitchens, with my own touch added, of course.   

Stuffed French Toast

  • 2 eggs
  • 2 tablespoons milk
  • 2 teaspoons sugar
  • 4 slices cinnamon raisin bread
  • 4 tablespoons cream cheese spread
  • 8 slices shaved honey ham
  • 2 tablespoons pancake syrup

Beat eggs, milk and sugar with a fork in a 9-inch pie plate or 8-inch square-baking dish until well blended.  Spread one side of each bread slice with 1 tablespoon of the cream cheese spread.  Top 2 of the bread slices, spread-sides up, with 4 ham slices each.  Cover with remaining bread slices, spread-sides down.  Lightly press edges of each sandwich together to seal.  Dip sandwiches into egg mixture until well soaked.  Heat large nonstick skillet sprayed with cooking spray on medium heat.  Add sandwiches; cook 2 minutes on each side or until golden brown.  Serve immediately with syrup.

Canadian Bacon Bagel

  • 3 slices Ready-to-Serve Canadian bacon
  • 1/2 of a small whole-wheat bagel, toasted
  • 3 very thin slices of a Granny Smith apple
  • 2 tablespoons shredded sharp cheddar cheese

Heat Canadian bacon as directed on package; place on bagel half.  Top with apples; sprinkle with cheese.  Microwave on medium (50%) 30 to 35 seconds or until cheese begins to melt.  Serve warm.   

Quicker than Fast Food Egg Sandwich

  • 1 English muffin, split
  • 1 large egg
  • 2 strips Ready-to-Serve Bacon
  • 1 slice cheese

Place 1 English muffin half on microwavable plate.  Crack egg carefully on muffin.  Microwave on high 40 seconds.  Fold bacon strips in half.  Place folded strips and cheese slice over egg.  Top with remaining English muffin half.  Microwave on high 30 seconds or until egg white is completely set and yolk is thickened around the edges. 

Peanut Butter Waffle Sandwich   

  • 2 frozen waffles
  • 2 tablespoons peanut butter
  • 1/2 of a small apple, sliced
  • 1 tablespoon jam or preserves, any flavor

Spread 1 waffle with peanut butter; top with apple slices.  Spread second waffle with jam; place, jam side down, over apple-topped waffle.  

A Morning Wrap   

  • 1 flour tortilla
  • 1 medium banana, sliced
  • 1 tablespoon low-fat cream cheese or 2 tablespoons peanut butter

Spread tortilla with cream cheese or peanut butter.  Top with banana.  Roll up.

Salsa Breakfast Roll-Up   

  • 1 flour tortilla
  • 1 tablespoon jalapeno light cream cheese spread
  • 1 egg, scrambled
  • 3 slices Ready-To-Serve Bacon (optional) or 1 tablespoon bacon bits
  • 1 tablespoon Thick ‘N Chunky Salsa

Spread tortilla with cream cheese spread.  Top with egg, bacon and salsa.  Roll up tortilla.
