Hard Rock Cafe's Mini Chocolate Lava Cakes

You can't get the sweet treat at the restaurant any more, but it is offered on their catering menu. Chef Bob Rufin joined us on the show with the secret recipe and we have it here, just for you. 

Mini Chocolate Lava Cakes


Ingredients

•    1 stick (½ cup) - unsalted butter, plus more for buttering small dishes/ramekins
•    6 ounces - bittersweet chocolate, chopped (best quality, such as Ghirardelli)
•    2 large eggs
•    2 large egg yolks only!
•    ¼ cup plus 2 tablespoons - light brown sugar, packed
•    1 teaspoon - vanilla extract
•    Pinch of salt
•    3 tablespoons - all-purpose flour


Instructions

  1. Preheat oven to 450°F. Generously butter six, 6-ounce small dishes or ramekins. Set the dishes on a baking sheet
  2. Melt butter in a medium bowl in the microwave. Immediately add the chopped chocolate and stir until chocolate is completely smooth/melted. If there are a few remaining chunks of chocolate, put the bowl back into the microwave for no more than 20 seconds, then stir again. Repeat if necessary. Set aside
  3. In a medium bowl, beat the eggs, egg yolks, brown sugar, vanilla and salt at high speed until thickened and pale. This usually takes approximately 4 minutes with a hand mixer. Add the melted chocolate and the all-purpose flower to the egg mixture and fold with a rubber spatula until just combined (The chocolate will sink to the bottom so be sure to scrape it up into the batter)
  4. Spoon the batter evenly into the prepared/buttered dishes or ramekins. Bake for 10 minutes until the cakes are set and puffed over the edges of the dishes. Let the cakes cool for 1-2 minutes. Holding the hot dishes with a towel, carefully invert the cakes onto dessert plates (dump them upside down). The cakes should come right out of the dishes, but you can run a thin-bladed knife around the edges if necessary. Serve immediately with vanilla ice cream or whipped cream.
