SWEET-AND-SOUR CHICKEN BREAST WITH TROPICAL FRUITS
Serves 4
- 4 boneless, skinless chicken breast halves
- 6 to 8 ounces each Maui Moa Marinade
- 1/2 cup all-purpose flour
- 3 tablespoons vegetable oil
- 1 cup diced fresh pineapple
- 1 cup chopped frest papaya
- 1 cup chopped mangoes, or tropical fruit of your choice
- Sweet-and-Sour Sauce
Garnish: Green onion strips, Sprigs of fresh cilantro
SWEET-AND-SOUR SAUCE
Makes about 4 cups
- 1/2 cup ketchup
- 1/2 cup vinegar
- 1/2 cup water
- 2 teaspoons soy sauce
- 1 cup granulated sugar
- 1/4 cup orange marmalade
- 1 1/2 teaspoon pealed and minced fresh ginger
- 1 teaspoon minced fresh garlic
- 1/4 teaspoon hot pepper sauce
- 2 tablespoons pineapple juice
- 2 tablespoons cornstarch blended with 1 1/2 tablespoons water
Combine all ingredients except the cornstarch and water in a medium saucepan. Bring to a boil stirring frequently.
MAUI MOA MARINADE
Makes 1 1/2 cups
- 1/2 cup soy sauce
- 1/2 cup canola oil
- 2 tablespoons mirin (Japanese sweet rice wine)
- 1 tablespoon minced fresh garlic
- 1 tablespoon peeled and minced fresh ginger
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 tablespoon cornstarch mixed with 1/2 tablespoons water
- 1 1/2 teaspoon brown sugar
