Sweet & Sour Chicken

SWEET-AND-SOUR CHICKEN BREAST WITH TROPICAL FRUITS

Serves 4

  • 4 boneless, skinless chicken breast halves
  • 6 to 8 ounces each Maui Moa Marinade
  • 1/2 cup all-purpose flour
  • 3 tablespoons vegetable oil
  • 1 cup diced fresh pineapple
  • 1 cup chopped frest papaya
  • 1 cup chopped mangoes, or tropical fruit of your choice
  • Sweet-and-Sour Sauce

Garnish: Green onion strips, Sprigs of fresh cilantro

SWEET-AND-SOUR SAUCE

Makes about 4 cups

  • 1/2 cup ketchup
  • 1/2 cup vinegar
  • 1/2 cup water
  • 2 teaspoons soy sauce
  • 1 cup granulated sugar
  • 1/4 cup orange marmalade
  • 1 1/2 teaspoon pealed and minced fresh ginger
  • 1 teaspoon minced fresh garlic
  • 1/4 teaspoon hot pepper sauce
  • 2 tablespoons pineapple juice
  • 2 tablespoons cornstarch blended with 1 1/2 tablespoons water

Combine all ingredients except the cornstarch and water in a medium saucepan. Bring to a boil stirring frequently.

MAUI MOA MARINADE

Makes 1 1/2 cups

  • 1/2 cup soy sauce
  • 1/2 cup canola oil
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon peeled and minced fresh ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoon cornstarch mixed with 1/2 tablespoons water
  • 1 1/2 teaspoon brown sugar
