Wasabi Aoli

  1.  2 each egg, chilled
  2. 1 Tbls. lemon juice, freshly squeezed
  3. 1 Tbls. white vinegar 24 ounces olive oil, pure
  4. 1 Tbls. parsley, chopped fine
  5. 2 Tsp. salt, kosher
  6. 1/2 Tsp. white pepper
  7. 1 Tbls.wasabi powder
  8. Put Roasted Garlic base in a stainless steel mixing bowl, with the lemon juice and vinegar. 
  9. Break the eggs into the mash and mix well. 
  10. With a wire whip slowly whisk in the oil. Streaming it in slowly.
  11. Add the parsley. 
  12. Chill, label to code.

Sesame Seared Tuna

  • 4 each tuna steaks, 1/2 inch thick
  • 2 Tbls. Soy Sauce
  • 2 Tbls. Sesame seeds
  • 1 Pinch white pepper, ground
  • 2 Tbls. corn oil
  • 1 Tsp.sesame oil
  1. Coat the tuna with the soy sauce. 
  2. Rub with the pepper and sesame seeds. 
  3. Heat oil in a skillet and sear tuna for one minute and turn over. 
  4. Repeat process until tuna is medium rare. 
  5. Add sesame oil at the last 30 seconds and let it coat the fish. 
  6. Remove and serve with appropriate condiments.

Mango Crab Salad

  • 2 Cups jicama, julienned
  • 1/2 Cup mango, julienned
  • 1/2 Cup crab claw meat
  • 1 Tbls. lime juice, fresh
  • 1 Tsp. chili peppers, minced fine
  • 1 pinch kosher salt
  • 1 pinch white pepper
  • 1 Tsp. cilantro, choped
  1. On a mandolin julienne the jicama. 
  2. Toss all ingrediants together and refrigerate for 30 minutes to let flavors combine. 
  3. Serve in small belguim endive cups.
