Brown Rice Waldorf Salad
¼ c. vanilla low fat yogurt
½ c. reduced calorie mayonnaise
¼ t. salt
¼ t. ground cinnamon
3 c. cooked brown rice, cooled
2 medium tart apples, cored & diced
1 ¼ c. coarsely chopped celery
1 medium carrot, diced
¾ c. chopped walnuts or pecans
¾ c. raisins
Assorted fresh fruit for garnish (optional)
Blend yogurt, mayonnaise, salt and cinnamon in a large bowl.
Add rice, apples, celery, carrot, walnuts, and raisins.
Mix well. Garnish with fresh fruit if desired.
