Crawfish Snapper
7 oz. Filet of snapper
Broil in oven at 350 degrees for 12-15 minutes. Sauté Crawfish tails in Cajun cream sauce. Pour over snapper and serve with broccoli.
Cajun Cream Sauce:
- 1 red bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1 onion, finely chopped
Sauté ingredients together with 1/2 pound butter. Salt & pepper to taste and add 1/2 tblsp Cajun seasoning. Cook for 3 minutes. Add 3 tblsp of flour and lightly brown. Cook approximately 2 minutes. Add 1/2 quart of half and half or whipping cream. Simmer until thickened; approximately 8 - 10 minutes. Enjoy!
