What’s for Dinner?
Beginning March 10th your dinner dilemma has been solved by Abby’s Catering!
Abby's Catering is now offering meals to go. Simply place your order by Wednesday at noon and come by to pick up your fresh, HOMEMADE meal Thursday and Friday from 4:30-6:00 pm. Heat and serve or freeze for later. Choose from chicken and wild rice casserole, stuffed bell peppers, chicken stuffed shells, or spaghetti and parmesan meatballs and more. Great for baby gifts, pot-luck dinners, emergencies.
Abby's Catering Norwood Village Baked Chicken Enchiladas
- 8 oz sour cream
- 8 oz plain yogurt
- 1 (10 3/4 oz) can cream of chicken soup
- 1 (4 oz) can green chiles
- 12 (6 or 7 inch) flour or white corn tortillas
- 1 cup shredded cheese
- 1 1/2 cups chopped cooked chicken
Heat oven to 350 degrees. Grease 9 x 13 inch pan. Combine sour cream, yogurt, soup, and chiles in medium bowl. Mix well. Spoon about 3 tbsp sour cream mixture down center of each tortilla. . Reserve 1/4 cup cheese. Sprinkle tortillas with remaining cheese , then add chicken. Roll up tortillas. Place in baking pan and cover with remaining sauce. Cover with foil and bake at 350 degrees for 25-30 minutes or until hot and bubbly. Uncover and add cheese. Bake uncovered for another 5 minutes or until cheese is melted. Makes 6 servings.
