Super Bowl Chili
- 1 1/2 lbs. ground beef
- 1/4 c. oil
- 1 c. chopped onions
- 1/2 c. chopped celery
- 2 large cloves garlic, minced
- 1 jar Tabasco chili mix (traditional)
- 1 can chili beans (do not drain)
- 1 can diced Mexican style tomatoes
- 1 chipotle chili in adobo sauce (remove seeds and mince)
- 2 T. adobo sauce
- 2 t. chili powder
- 2 T. chili sauce
- 1 jar of water ( about 8 ounces)
Brown and drain ground beef, set aside. Add oil to a large heavy pot and sweat the onions, garlic and celery by place them in the pot with the oil and covering with a lid on low heat. Sweat vegetables until tender. Add the ground beef. Add the remaining ingredients. Simmer for at least 20 minutes. The chili can be served in bread bowls for a different touch. Garnish when serving with cilantro and lime and grated cheddar cheese. A great accompaniement to this meal could be mini cheese and jalapeno corn muffins-mix 1 box jiffy corn muffin mix according to package directions. Add one cup shredded cheddar cheese and one seeded and chopped jalapeno pepper and mix. Fill mini muffin tins and bake according to package directions.
