A tasty rice tart recipe courtesy of Farm Families of Mississippi

 Rice Tarts

Northwest Mississippi is proud to be home to the majority of rice producers in Mississippi. In 2014, the rice crop contributed $174 million in value to the state's economy and accounts for thousands of jobs, both on and off the farm. Rice also ranks among the state's top agricultural exports. 

Rice is nutritious, economical, blends well with any food pairings and is easy to make. Best of all, rice is cholesterol-free, sodium-free and has no trans or saturated fat. Rice Tarts 

2 - 8 oz. cream cheese, softened 

¾ c. sugar 

2 eggs 

1 t. vanilla 

1 ½ c. cooked rice 

12 vanilla wafers 

Fresh fruit or cherry pie filling 

Beat cream cheese, sugar, eggs and vanilla in large bowl. Stir in cooked rice. 

Place a vanilla wafer in the bottom of 12 muffin paper cups. 

Spoon rice mixture over vanilla wafers, filling each cup. 

Bake at 375 F for 15 - 20 minutes. Let cool. 

Top each tart with fresh fruit or 1 tablespoon cherry pie filling. 

Serve chilled or at room temperature.
