Port-O-Call Seafood Restaurant
Stuffed Red Snapper
- 4-6 10oz red snapper filets
- Garlic powder
- Lemon juice
- Seafood seasonings
- Crabmeat dressing (recipe follows)
Sprinkle filets with garlic powder and rub with lemon juice. Cut pocket in filet and stuff with dressing and sprinkle with seasonings. Bake at 375 degrees 20 to 30 minutes, or until done.
Crabmeat Dressing
- 4 cups chopped onions
- 2 cups chopped celery
- 2 cups chopped bell pepper
- 1 cup vegetable oil
- 1 lb crabmeat
- 2 tblsp parsley flakes
- 1 tblsp dried basil
- 1 tblsp creole seasoning
- 6 cups bread crumbs
In an 8 quart pot simmer onions, bell peppers, and celery in oil for 30 minutes. Add crabmeat, parsley, basil, and creole seasoning, and simmer for 15 minutes longer. Remove from heat and stir in bread crumbs.
