Crawfish French Bread Soup

  • 1 pound crawfish
  • 1/2 loaf french bread
  • 2 cups yellow onion (diced)
  • 4 tbs. garlic
  • 3 quarts milk
  • 1/4 lb. butter
  • 2 tbs. pepper
  • 1/2 tsp cayenne
  • 1 lunch parsley
  • 1/2 cup parmesan cheese
  • 1/8 cup flour
  • paprika to garnish
  • green onion

Saute' onions and butter. Add garlic, cayenne, salt and pepper. Puree the french bread and milk in processor. In a separate pan, add flour with onions, allow to cook for a few minutes and add pureed french bread. Bring this to a boil. Add crawfish, parsley, parmesan cheese and green onion.
