Creating sweet potato chewy bars.

Mississippi Sweet Potatoes

Sweet potatoes are a versatile vegetable on the dinner table of Mississippi families. Sweet potatoes are nutrient dense with Vitamin A, beta carotene, Vitamin C, folic acid, and high in fiber. 

In 2013, Mississippi had 20,000 acres of sweet potatoes harvested and brought in $69 million in production to Mississippi.  Our Beauregard variety is a beauty bringing a brilliant orange to enhance any dinner plate.

Sweet Potato Chewy Bars

4 eggs

1 box dark brown sugar (1 lb.)

1 c. cooking oil

2 c. Bisquick

1 c. coconut

1 c. chopped pecans

1 tsp. vanilla

1 c. finely shredded sweet potatoes, raw

 

Combine all ingredients and pour into 9x13-inch pan.  Bake 45 minutes at 350°. After cooling, cut into squares to serve.
