Vegetable Chartreuse Recipe.

 Ingredients: White Turnip    
  Red Pepper    
  Green Peas    
 

 Savoy Cabbage

Sweet Potatoes

String Beans

   
Recipe:            
Bake Sweet Potato in a 350 degree oven until done, peel and mash with butter and salt to taste. Set Aside
 
Savoy Cabbage: Remove root and pull back leaves. Blanch leaves in boiling salted water,
shock in ice water. Set Aside.
String Beans. Blanch Beans in boiling salted water, shock in ice water. Set Aside.
 
White Turnip: Cut turnip into 1/4" size match sticks. Blanch in boiling salted water, 
shock in ice water.  Set Aside.
 
Red Pepper: Roast Red Pepper under open flame. When done place into brown paper bag, 

when cool peel.

 

Green Peas: Blanch Green peas in boiling salted water, shock in ice water. Set Aside.
 
Line 3" aluminum cup with the cabbage leaves. Fill the lined cup with layer of Sweet Potato.
Add layer of String Beans, a layer of White Turnip and a layer of Roasted Red Pepper,
finish with green peas.
 

Wrap Container in plastic wrap steam for 20 minutes.
