Recipe for Chicken Francese as seen on the 4 O'clock Show.

Chicken Francese

Serves 4

1 cup     Flour

3 ea        Whole Eggs

¼ cup    Whole Milk

4 oz        Parmesan Cheese

8 ea        Boneless Skinless Chicken Breast

3oz         Olive oil

4 oz        White Wine

1 ea        Lemon (Segmented)

1 oz        Prosciutto (Thinly Sliced and Diced)

1 tbls     Chopped Parsley

2 tbls     Whole Butter

TT           Salt & Pepper


  1. Place a skillet over medium heat on a stove top
  2. When the skillet is hot add the olive oil & 1 tbls of butter
  3. Season the chicken breast with salt & pepper
  4. Crack the eggs in a bowl and beat, Add the milk and parmesan cheese and mix until combined
  5. Dredge the chicken breast in the flour and then in the eggs
  6. Place battered chicken breast in the hot pan and let cook on one side for 3 minutes
  7. Turn chicken breast and let cook for an additional 2 minutes
  8. Add the white wine, lemon segments & prosciutto to the pan
  9. Reduce the liquid by half and add the parsley
  10. Remove from the heat
  11. Finish by swirling in the whole butter so that the sauce thickens
  12. Serve with your favorite pasta.
