SOUTH MISSISSIPPI (WLOX) - Dietitian Deborah Colby with Gulf Coast Health Educators came on our 4 p.m. show on Tuesday. She talked about healthy, high fiber and high protein lunches.
Here is the recipe for the salad wrap:
Chicken breast (boneless and skinless)
Tortilla wraps (whole wheat preferred)
Bleu cheese (crumbled) or light bleu cheese dressing
Slice one chicken breast into two halves. Season with garlic powder, onion powder and black pepper.
Grill the breast until golden brown markings appear.
On a tortilla wrap place (stack) lettuce leaf, chicken breast, halved apple slices, dried cranberries.
Sprinkle crumbled bleu cheese or drizzle bleu cheese dressing on the stacked contents.
Now fold the bottom of the wrap upper to contain the ingredients, roll the wrap in a left to right motion.
There you have a delicious salad wrap, with foods from 5 food groups; grains, protein, fruit, dairy and vegetable.
