Braised and Baked Rack of Lamb with Dill and Mint Sauce June 28, 2004 at 1:21 PM CDT - Updated June 28 at 8:47 AM Braised and Baked Rack of Lamb With Dill and Mint Sauce By Student: Reuben Hanberry1 Rack of Lamb 2 Tbsp of Peanut Oil 2 cups of Plain Yogurt 1Tbsp of Dill chopped 2 Tbsp Mint chopped Salt and Pepper to taste Sauce: Combine Yogurt, Mint, Dill, and Salt and Pepper. Seperate into 2 dishes, 1 to marinate, and 1 to serve with meal. Add Rack in one dish and marinate for 3 hours. (preferably over-night) Braising: Add oil to Saute Pan, Braise all sides of the rack, being sure to make a nice crust. Baking: After Braising, Place rack in oven on 375 degrees for 45 minutes. Remove and let stand for 5 minutes. Cut into chops, and serve with side of sauce.
