Ham and Broccoli Cheese Rollups
1 box Uncle Bens Broccoli and Cheese Gratin Rice
1 pkg. sliced smoked sandwich ham
1 sm. container fresh mushrooms, sliced and washed
1 sm pkg sliced Monterrey Jack cheese ot shredded Monterey Jack cheese
1 can Cream of Mushroom Soup
1 T. chopped parsley
Cook rice according to package directions and preheat oven to 375 degrees. Using one slice of ham at a time, lay the ham on a plate. Place 2 T. cooked rice on one end of the ham slice with 2 mushroom slices, roll ham starting with the small end, and lay in a casserole dish with seam side down. Top with cheese, scatter remaining mushrooms on top, place in preheated oven and bake 7 to 10 minutes-enough to heat through and meat cheese. While baking, heat soup in saucepan, DO NOT ADD MILK,heating until warm. When casserole is hot and cheese is melted and beginning to brown, remove from oven and pour hot mushroom soup over the top and sprinkle with chopped parsley.
NOTE: Cream of celery soup may be substituted for Mushroom
Sliced Turkey or Chicken may be substituted for the ham
Colby or Cheddar may be substituted for the Monterey Jack cheese.
