"KILLER" KEY LIME PIE
Ingredients for crust:
6 oz (1 pkg) Cinnamon Graham Crakers
1 cup shelled walnuts or pecans
2 tbls melted butter
Ingredients for filling:
11 egg yolks
3 14oz. can sweetened condensed milk
3/4 cup Key Lime juice
1 whole Key Lime peel
3 oz Cuervo Gold Tequila
Instructions:
In a food processor coarsely grind the Graham Crackers and nuts. Place in a 9 1/2" deep dish pie plate and pour in butter. Mix together and mold crust. Set aside.
In a food processor at high speed mix egg yolk and Key Lime peel for 4 minutes. Slowly add milk, then the tequila, then the Lime juice. Continue mixing for 1 minute. Pour mixture into pie shell and make a water bath. Bake pie uncovered for 25 minutes at 300 degrees to set pie. Don't let the top brown.
Refigerate for 4 hours. Garnish with crumbled Graham Crackers, whipped cream and a sugar coated slice of Key Lime.
(Note: Scenic Cafe' places the pie slice on a bed of white chocolate w/ raspberry and finishes the pie with a Sour Cream Tequila Lime Sauce.)
