Snapper A LA Dave Recipe
6oz. Snapper Fillet
Flour for dredging
Vegetable oil for pan Frying & sautéing
2oz. Quartered Artichoke Hearts
2oz Fresh Mushrooms Quartered
1 Serving Cooked Angel Hair Pasta
White Wine Cream
6 oz half & half
2 oz dry white wine
1 tsp lemon juice
Creole Seasoning to taste
Salt to taste
Black Pepper to taste
Dredge Snapper Fillet in flour and brown in skillet approx 3 to 5 minutes, set aside. Sauté artichokes, mushrooms and seasonings for about 2 minutes sprinkle flour and sauté for about 1 minute. Add cream and let simmer for about 1 to 2 minutes until desired thickness. Place Snapper over pasta and top with white wine cream sauce.
