1 - 1 1/2 lbs of your favorite fish
1 yellow Squash
1 Zucchini
1 Carrot
1 Red Onion
Splash White Wine
1 tbsp. whole Butter
BLEND
Salt & Pepper
2 Baker sheets (Parchment Paper)
This is up there as one of the best fish dishes. Listen, you can use most fish with this recipe. Some trout, Red Fish, Amberjack or any other local fresh fish you can get your hands on.
Clean and de-bone fish carefully or buy them cleaned already. Cut veggies into strips (julienne) Parchment papers are those sheets that line a full size sheet pan. You'll probably find the parchment paper in rolls at the local Winn Dixie or you can try to ask the people in the bakery if they can sell you a couple of sheets. Anyway, you want to cut the parchment paper into hearts, make them as big as possible so you can put the fish in the middle and fold the paper around it. I'am gonna give you a second to read that again,.... O.K. it's easier than it sounds. I hope no one is cutting an anatomically correct heart out there. Once you got it, open back up the sheets and admirer your work, then divide fish fillets, veggies, salt & pepper, BLEND a "splash" of white wine and the butter between the two sets of fish sheets. Now fold each heart as "airtight" as possible. Starting at the bottom pointy side working towards the top center. Little tight folds that keep folding over themselves. Now that the fish is "in the bag" pop it in a pre-heated 400 degrees oven and let them bake for about 15 to 20 minutes. If you have a convection switch on the oven this would be a good time to crank her up. Grab your self a glass of your favorite bottle of White Wine and Live!
