Christmas Chicken

1 whole chicken

2 cans beer

1 bottle apple juice

Barbecue rub:

1/3 c. paprika

1/3 c. kosher salt

1/3 c. brown sugar

2 T. italian seasoning

2 t. nutmeg

1 T. crushed red pepper

1 t. black pepper

Marinade the chicken in 1 can beer and apple juice at least 2 hours to overnight. Rub chicken with rub, making sure to place some rub under the skin. Sit chicken on top of second open full beer can. Place on grill and grill over indirect heat for 1 1/2 to 2 hours.Rotate chicken 1/4 turn every 30 minutes until chicken reaches 165 degrees.
