Cheesey Potato Casserole with Braised Chicken Breast
1 bag cubed Hashbrowns
1 8 oz. container of Sour Cream
1 can Cream of Chicken Soup
2 cups Shredded Cheddar Cheese
1/2 cups chopped Ham
1/2 cups chopped Onion
1/3 cups Green Onion
4 boneless Chicken Breast
Lemon Pepper ( or your choice of seasoning)
Butter or Margarine
Mix all items together except 1/2 cups green onion and 1/2 cups shredded cheddar, and the last three ingredients. Place in an oven proof casserole dish. Cook at 350 degrees for 45 min. to 60 min.
Heat butter in frying pan, and brown seasoned chicken breast in frying pan with butter. Place browned chicken breast on top of potato mixture when done and garnish with chopped green onions. Serve with green beans or english peas.
