Nancy Freeman creates a tasty rice dish

BILOXI, MS (WLOX) -

Rice is a favorite in family meals!  It is nutritious, economical, blends well with any food pairings and is easy to make.  Best of all, rice is cholesterol- and sodium-free and has no trans or saturated fat. Rice is also gluten-free and is the least allergenic of all grains.

Northeast Mississippi is proud to be home to the majority of rice producers in our state.  In 2010, the rice crop contributed more than $224 million in value to the state's economy and accounts for thousands of jobs, both on and off the farm. Rice also ranks among the state's top agricultural exports.

Nancy's Rice Salad

3 cups cooked rice

2 bunches green onions, chopped finely

2-3 stalks celery, chopped finely

1 Bell pepper, chopped finely

3 Hard cooked eggs, chopped or grated

Small jar chopped pimentos, drained

8 ounce can Early June peas, drained   

Salt & Pepper to taste

1/4- 1/2 teaspoon paprika

2/3 cup Mayonnaise (may add more for desired consistency)

Mix all ingredients together and refrigerate overnight to 24 hours before serving.  The flavors blend and develop while in refrigerator.  I usually make 1-2 days ahead of time.

    Investigators from the National Transportation Safety Board are expected to arrive on the Coast tomorrow to examine wreckage from that Cessna 172 that crashed this morning just north of the Diamondhead Airport.
