    It's a voyage that helps introduce tourists to those small waterfront towns that they may not ordinarily think to visit. A cruise ship docked in Biloxi on Wednesday night. Then on Thursday, passengers visited several attractions including the Biloxi lighthouse and the visitors center. The Grande Caribe set sail from New Orleans and will continue on until it reaches St. Petersburg. Crew members said it's the stops along the way that makes these small cruises stand out.
  • 1 1/2 cups flour
  • 4 eggs
  • 3 cups sugar
  • 1 can sweetened condensed milk
  • 2 cans Pet evaporated milk
  • 2 sticks butter
  • 8 cups water
  • 2 Tbs vanilla extract
  • 2 lbs. coconut
  • 6-8 pie crusts of your choice (we used graham cracker crusts) 

Mix 1 1/2 cups flour with a little water until mixture is smooth, and set aside for later.

Mix eggs, sugar, milks, butter, and water in large pot. Cook over medium heat until mixture comes to a rolling boil. Stir occasionally. When mixture starts to boil, add in the flour mixture and stir constantly to keep from sticking. Bring the mixture back to a boil and cook for about 3 minutes.

Take it off the heat and add 2 Tbs. of vanilla flavoring and 2 lbs. of coconut. Stir mixture until well mixed. Dip the mixture out of the pot and into pie crusts.

Cool completely and refrigerate pies for at least 1-2 hours.
