Making sauce in South Mississippi

OCEAN SPRINGS, MS (WLOX) - Shed BBQ and Blues Joint on Highway 57 in Jackson County is taking the south by storm. The Orrison family, owners of the restaurant have sold franchises in Florida, Alabama and Louisiana.

This week they announced an agreement with a group from Hattiesburg to open a Shed in the old Coca Cola Plant in Hattiesburg. That will be the seventh Shed restaurant.

The Orrison family has now opened a Saucery on Government Street in Ocean Springs.

"You can't have all of these restaurants making BBQ sauce with your formula. They're all going to taste different," said Craig Orrison.

The saucery makes the classic BBQ sauce, rib and chicken rubs, cole slaw sauces and bean sauces.

Since January the Shed Saucery has turned out 12,000 gallons of BBQ sauce and more than 11 tons of rib rub.

Common ingredients are poured into a 100 gallon vat. A special pot is then added to the mix.

"That's the secret. We call it our cocktail. Not many people know what's in that," said Orrison.

The Shed teamed up with Rene Patout who once ran Rene's Quality Meats and Cajun Specialties. The Saucery moved into Patout's old building and began mass producing sauces for their growing restaurant business.

Right now the BBQ sauce is only available at the restaurant, but Craig Orrison said that's getting ready to change.

"We have bottling equipment coming in soon. Then you'll be able to buy our sauce at retail stores and over the internet," Orrison said.
