Pan Blackened Shrimp with Orzo, Dill and Feta Cheese
in a Baked Wonton Cup

2 teaspoons unsalted butter
-
1 teaspoon minced garlic
-
¼ cup Bell Pepper, diced small
-
2 cups Fresh Shrimp-cleaned and peeled
-
2 teaspoons good quality blackening spice

2 ½ cups cooked and cooled Orzo pasta
-
1 teaspoon fresh chopped dill
-
¼ cup Seafood or Shrimp stock
-
½ cup crumbled Feta cheese
Heat cast iron pan:
At once add the butter, garlic & bell pepper—sautee for about 10 seconds.
Add shrimp and blackening spice, cook for 3 minutes.
Add orzo, dill & stock, cook for 1 minute—stir.
Add salt & pepper to taste. Turn off heat—add crumbled feta, toss & serve.
Green Bean and Blue Cheese Salad
- 2 Fresh Green Beans-blanched and cooled
- 2 each ripe tomatoes, diced large
- 1 can black olives, pitted
- 1 cup Crumbled blue cheese
- ¼ cup Extra Virgin Olive Oil
- 2 Tablespoons balsamic vinegar
- 2 teaspoons honey
- ¼ cup chopped green onions
- Salt & Pepper to taste
Mix together all ingredient, chill, serve
