Pan Blackened Shrimp with Orzo, Dill and Feta Cheese
in a Baked Wonton Cup

  •  2 teaspoons unsalted butter
  • 1 teaspoon minced garlic
  • ¼ cup Bell Pepper, diced small
  • 2 cups Fresh Shrimp-cleaned and peeled
  • 2 teaspoons good quality blackening spice
  • 2 ½ cups cooked and cooled Orzo pasta
  • 1 teaspoon fresh chopped dill
  • ¼ cup Seafood or Shrimp stock
  • ½ cup crumbled Feta cheese

Heat cast iron pan:

At once add the butter, garlic & bell pepper—sautee for about 10 seconds.

Add shrimp and blackening spice, cook for 3 minutes.

Add orzo, dill & stock, cook for 1 minute—stir.

Add salt & pepper to taste. Turn off heat—add crumbled feta, toss & serve.

 

Green Bean and Blue Cheese Salad 

  • 2 Fresh Green Beans-blanched and cooled
  • 2 each ripe tomatoes, diced large
  • 1 can black olives, pitted
  • 1 cup Crumbled blue cheese
  • ¼ cup Extra Virgin Olive Oil
  • 2 Tablespoons balsamic vinegar
  • 2 teaspoons honey
  • ¼ cup chopped green onions
  • Salt & Pepper to taste

Mix together all ingredient, chill, serve
