Twin Grilled Lamb Chops with Honey Butter Glaze

2- 6 oz Frenched Lamb Chops
1 oz Olive Oil
Salt and Pepper mixture to taste
Honey Butter Glaze (recipe follows)
Rosemary Sprigs as garnish
Fresh Chopped Parsley as garnish
Preheat grill to 450 degrees or cast iron grill skillet on medium high. Lightly coat each chop with oil and season to taste with salt and pepper mix. Place both chops on grill or in skillet and let sit for 2-4 minutes. Rotate from current position 45 degrees, this will give you the classic diamond shape pattern. Let cook in this postion for another 2-4 minutes then turn chops over and continue to cook until desired temperature is reached. Another 3-5 minutes for medium rare. Remove from grill or skillet and place on serving platter. Top each chop with a 1 oz portion of Honey Butter and garnish with fresh Rosemary Sprigs, Chopped Parsley and if desired Peppered Mint Jelly on side.
Honey Butter Glaze
1 lb. Unsalted Plugra Butter
1/2 cup Honey
Salt and Pepper mix to taste
Place all ingrediants into mixing bowel. Using paddle attachment beat on medium speed until completely incorporated. Remove bowel from mixer and turn butter out onto parchment paper or wax paper. Form a tight, solid cylinder of butter and refrigerate for 4 hours or until firm. Slice roll into 1/4 - 1/2 inch slices.
Parmesan Tomato Halves
1 large firm Beefsteak Tomato
1 oz Olive Oil
Salt and Pepper to taste
3 oz fresh shredded Parmesean Cheese
1 oz fresh chopped Oregano Leaves
Fresh Chopped Parsley as garnish
Preheat oven to 400 degrees. Slice top and bottom (stem ends) off of Tomato, this will give you a flat serving surface. Place Tomato Halves in oven proof cooking dish. Lightly drizzle both halves with Olive Oil and season with Salt and Pepper to taste. Top both halves with equal amounts of Shredded Parmesean Cheese. Sprinkle 1/4 to 1/2 teaspoon of fresh chopped Oregano on top of cheese, this is to be done to taste or omitted if not desired. Place dish with tomatoes into preheated oven and bake for 8-12 minutes or until cheese is melted and tomato halves are soft to the touch. Remove from oven and sprinkle with chopped Parsley as garnish. Serve along side of Twin Grilled Lamb Chops with Honey Butter Glaze,or as a side to your favorite main entree.
