Crawfish cook-off attracts hundreds

BILOXI, MS (WLOX) - The fifth annual crawfish cook off was held on the last day of the Coast Coliseum Crawfish Festival Sunday. 23 teams entered hoping their recipe came home a winner.

Hundreds of pounds of hot boiled crawfish poured out for sampling.

Batesville, Mississippi resident said, "I got to have 'em hot."

23 teams compete to see whose secret recipe will win the crowd over. So what is their secret recipe?

One man said, "The mushrooms."

Robert Bell said, "We zap them, and what happens is all the seasoning that's in the water it will soak into the crawfish."

One team said the key ingredient is ice cold water.

Deke Johnson said, "That actually cools down the water it stops the cooking process and the shock of the coldness the shock of the ice in the hot water actually makes the meat draw up and it sucks in the spices and everything from the meat."

As steam rolls out of the boiler hundreds of people wait in line to pinch the tails and,

Mike Dunaway said, "Suck the heads."

Louisiana Natives said nothing goes better with crawfish than,

Three people said, "Corn, potatoes, sausage and beer."

As hundreds sample a little lagniappe the majority agree on one thing.

One man said, "Jack Daniels, they're the best.'

Batesville, Mississippi resident said, "Jack Daniels, they got it beat I'm tellin ya it's Jack Daniels."

Team members said there's only one thing that makes their mud bugs better.

Anastacia Parou said, "Voodoo makes it special."

First place winners for the Judges and People's choice will go home with a Budweiser trophy, $500 cash and a new cooking unit.

First place winner in the Judges choice was Catfish Reyes and in the People's choice was Creole Boilers.
