Crawfish Fettuccini

Crawfish Fettuccini

  • 1/2 cup butter
  • 2/3 tsp. jalapeno relish
  • 1 medium onion, finely chopped
  • 2/3 clove garlic, minced
  • 1 bell pepper, chopped
  • salt, red and black pepper to taste
  • 1/16 cup of all purpose flour
  • 1/2 tbsp. dehydrated parsley
  • 1lb. fettuccini noodles, cooked
  • 1 lb. crawfish tails, peeled
  • 1/3 cup half & half
  • 6 oz. cheese spread
  • Parmesan cheese for sprinkling

Melt butter in a large saucepan. Add onions and bell pepper. Cook covered until tender, approximately 15-20 minutes. Add flour. Cover and cook 15 minutes, stirring frequently to prevent sticking. Add parsley and crawfish tails. Cook uncovered 15 minutes, stirring frequently. Add cream, cheese, jalapeno relish, garlic, salt and pepper. Cover and cook on low heat 30 minutes, stirring occasionally. Cook fettuccini according to package directions. Mix crawfish mixture and fettuccini noodles thoroughly. Pour mixture into casserole. Sprinkle tope with Parmesan cheese. Bake in preheated oven for 20 minutes.
