Cabo Wabo Shrimp

 

 

 

CABO WABO SHRIMP
Casino Magic, Bay St. Louis

Ingredients:

  • Shrimp, 31/35 count (14 each)
  • 1 oz. Tequila
  • 2 oz. Clarifed butter
  • 3 oz of heavy cream
  • 10 oz. of tri-colored bow-tie pasta
  • 2 oz. lime juice
  • 1 tsp. crushed red pepper flakes
  • 1 piece of grilled bread
  • 2 lime slices
  • 1 tsp chopped parsley

PROCEDURE:

  • Heat saute pan
  • Add clarified butter and shrimp
  • Cook till almost done
  • Add garlic. Cook for one minute
  • Add lime juice and Tequila
  • Let reduce by half.
  • Add heavy cream. Let reduce by half.
  • Add hot pasta to saute pan. Toss.
  • Place in large pasta bowl.
  • Garnish with red pepper flakes and lime slices.
  • Sprinkle parsley and diced red peppers on rim of bowl.

Yields: 1 order/serving
