Strawberry Splash

Mother's Day is Sunday, May 10th.  Celebrate the women in your life who have nurtured you throughout your life.  Try these delicious recipes using strawberries to show her how much you appreciate her.

One cup of sliced fresh strawberries has 50 calories, is low in carbohydrates and is a good source of dietary fiber.  They are a great source of Vitamin C, Vitamin A, Calcium, Potassium and Folate.

Measuring Guide:

1 ½ lb. = 2 pints or 1 qt.
1 small basket = 1 pint
1 pint = 3 ¼ cups whole berries
1 pint = 2 ¼ cups sliced berries
1 pint = 1 2/3 c. pureed berries
1 cup = about 4 oz.

Strawberry Salsa
  • 1 c. coarsely chopped strawberries
  • 1 Tbsp. orange juice
  • 1 tsp. grated orange peel
  • 1 green onion, finely chopped, top included
  • 1 tsp. Dijon-style mustard
  • 2 Tbsp. dried currants
  • 2 Tbsp. red wine vinegar
Fabulous Strawberry Muffins
  • 2 ½ c. flour
  • ½ c. sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 ½ c. buttermilk
  • 1/3 c. melted butter
  • 2 eggs, slightly beaten
  • 1 tsp. vanilla
  • 1 pint fresh strawberries, hulled and chopped

Additional sugar for topping

Preheat oven to 400°F.  Spray muffin tin with nonstick cooking spray or line muffin cups with paper cupcake liners.

In a large bowl combine flour, sugar, baking powder, baking soda and salt, stir well until all ingredients are well blended.

In another bowl, whisk together the buttermilk, butter, eggs and vanilla.  Make a well in the middle of the dry ingredients, pour in liquid mixture and strawberries.

Using a large spoon, gently fold ingredients just until moist, do not overmix.

Spoon the batter evenly into 12 muffin cups.  Sprinkle each muffin with about ½ tsp. sugar, if desired.  Bake 20-25 minutes.

Strawberry and Spinach Salad
  • 1 pint fresh strawberries
  • 2 bunches fresh spinach
  • ½ cup sugar
  • 1 ½ Tbsp. minced green onion
  • ½ tsp. Worcestershire sauce
  • ½ tsp. paprika
  • ½ c. olive oil
  • ½ c. balsamic or cider vinegar
  • 2 Tbsp. sesame seeds

Wash strawberries under cool running water.  Remove caps and set aside to drain.

Wash spinach and remove large tough stems.  Tear large leaves into small pieces.  Drain.

In a medium bowl, combine remaining ingredients and whisk together.

Slice strawberries into halves or quarters and place in a large bowl.  Add dry spinach.

Pour dressing over all and toss.
