Peanut Palooza

You can do almost anything with peanuts.  They are delicious all by themselves or a healthy addition to recipes.  As you head out to soccer or ball practice this spring, don't forget to try these great recipes from the National Peanut Board.  Use them for a high energy snack or a meal on the go.

Munch ‘n' Go Mix                             

  • 2 c. roasted peanuts               
  • 2 c. banana chips
  • 1 c. chopped mixed dried fruit (apricots, apples, pineapple, papaya)
  • 1 c. dried cranberries
  • 1 c. candy-coated chocolate pieces

Toss all ingredients together.  Store in an airtight container at room temperature for up to 3 months.

Fruity Peanut Butter Spread

  • 1 medium apple, quartered but not peeled
  • ½ c. dried cherries or dried cranberries
  • 1 c. peanut butter
  • ¼ c. orange juice
  • ½ tsp. cinnamon

In a food processor, chop apple and cranberries.  In a small bowl, combine peanut butter, orange juice and cinnamon.  Stir apple/cranberry mixture into peanut butter mixture until combined.  Cover and refrigerate.

Grilled Peanut Butter & Banana Sandwich - The King's Favorite (Elvis Presley)

  • 6-8 Tbsp. smooth or crunchy peanut butter
  • 8 slices of whole grain bread
  • 2 large ripe bananas, sliced lengthwise into a total of 16 pieces
  • 2 Tbsp. honey
  • Butter flavored cooking spray

Spread about 1 Tbsp. of the peanut butter on each of the bread slices.  Place the banana pieces on top of the peanut butter on 4 of the slices, and drizzle with honey.  Press the remaining slices of bread on top to make 4 sandwiches.  Place a large, non-stick skillet over medium-high heat.  Coat the bread with the cooking spray just before browning each side.  Saute (or grill) sandwiches, in batches, approximately 2 minutes per side, until golden brown.  Slice the sandwich diagonally, and serve warm.

Peanut Apple Toastie

  • 2 slices bread, toasted and buttered
  • 2 Tbsp. peanut butter
  • ½ apple, sliced
  • Lemon juice
  • Cinnamon
  • 1 tsp. brown sugar

Spread peanut butter on one side of each of the two slices of toasted bread.  Dip apple slices in lemon juice.  Arrange apple slices on peanut butter and sprinkle with brown sugar and cinnamon.  Put on a baking sheet and place under broiler.  Broil 3-5 minutes or until lightly browned.

Nana Dog

  • 6 bananas
  • 6 hot dog buns
  • 1 jar of peanut butter, crunchy or smooth

First set out the hot dog buns.  Open the buns and place the bananas.  You may want to cut the bananas in order for them to fit inside the buns.  Next, spread the peanut butter on top of the banana.  Cover with your favorite topping.  Try sprinkling raisins or chocolate chips or maybe drizzle on some chocolate sauce or honey.
